for vada
soak white urad dal overnight and grind it with very less water.
Add handful of semolina and two teaspn of salt to the urad dal and mix it gently and keep aside.

For tamarind chutney
Take tamarind pulp and add sugar and chilli powder as per your taste…i like it tangy.

For yoghurt
Take yoghurt and mix with salt, chopped chillies and coriander.

To fry vada
First in a large bowl take cold water and add one teaspn of salt, one teaspn of black salt, chilli powder and a pinch of hing or asafoetida powder.
Make ball of vada and make it flat in palm of your hand and to make hole in the middle just take water in your finger and make a whole in between the vada and then slide into the oil and fry till golden brown.Once brown put it straight into the water that we made earlier.

To serve
Add vada and then top it with yoghurt and tamarind chutney and then sprinkle the roasted and grinded cumin and red chillies powder.

Mix all the ingredients and make a soft dough….u can improvise by adding garlic for garlic nan or coriander or butter for your choice of nan.We make our nan at home now because it is much cheaper and easy to make.
Now cover your dough and keep it in a warm place for 2 – 3 hrs.Dough will be twice the size in that time ….make balls of dough and press it like u press ur roti or chapatti and fry on tawa as u fry yr roti.
